Cretan Dakos

A Cretan Dakos, an appetizer similar to the Italian bruschetta, is delicious and easy to make. Traditionally a Dakos is made with rusk, a hard bread made with chickpea or barley flour however it can be made with any type of bread you like. If rusk is not available where you live, you can use sliced and toasted whole-wheat baguette bread or crisp rolls with great results . . . . as seen in photo!

Ingredients

4 – 6 whole-wheat crisp rolls

Balsamic vinegar (optional)

4 tomatoes, diced or coarsely grated

¼ - ½ cup crumbled Feta cheese

Capers

Fresh or dried thyme or oregano

Extra virgin olive oil

Preparation Method

Place crisp rolls on a plate and drizzle each crisp roll with a dash of balsamic vinegar (optional). Top with grated or diced tomatoes and Feta cheese. Add capers and fresh herbs, season with ground pepper and drizzle with extra virgin olive oil, to taste. Serve immediately.

Tips

  • In Greece we often enjoy this appetizer or meze with a glass of chilled white wine or Ouzo, before dinner but it’s also a great luncheon dish served with a fresh green salad.

  • Instead Feta cheese, you can use any type of goat cheese and if you are counting calories, I would suggest using cottage cheese.

  • To grate tomatoes, just place an old fashioned grater in a soup plate, cut tomatoes in half and grate. Discard tomato skins and use the tomato pulp for Dakos or any other recipe or tomato sauce.
