Saganaki - Fried Greek Cheese

Ingredients

4 slices Kefalotyri or Graviera, each slice about 75 – 100g each and 1 ½ - 2 cm thick

Batter

1 large egg

4 tblsp water

¼ cup flour

Olive oil (or sunflower oil) for frying

2 lemons cut into halves or wedges

Preparation Method

Start by making the batter. Beat eggs and water together. Add flour and mix well until you have a smooth batter.

Dip cheese slices into better and make sure both sides and edges are well covered. Leave cheese slice in better until ready to fry.

In a deep skillet, heat oil and fry cheese slices on both sides until golden brown; first on one side en on other side, turning only once!

Remove from skillet and place on serving plate and squeeze some lemon juice over each slice. Serve at once with extra lemon wedges and crusty Greek style bread.

Yield: 4 servings as a meze, appetizer or light meal.

This dish can be served for breakfast with fried eggs and bread or toast. As a luncheon dish with a tossed green salad or as a meze with pita bread and lots of lemon!

Tips!

  • If Greek cheeses are not available in your area, use a rather hard yellow sheep or goat milk cheese with a tangy flavor and a sharp aroma!

  • To avoid cheese melting too quickly, place cheese slices in freezer for about 10 – 15 minutes before frying.
