The Mighty Mushroom
Like many Athenians, I visit my local neighborhood farmers market, (laiki) every week and stock up on an abundance of amazing seasonal fruit, vegetables and herbs. This past year I have also been venturing out of Athens in search of small organic farmers markets where, much to my delight, I have discovered many new high quality choice products full of vibrant flavors!
Recently, at the Tuesday afternoon organic farmer’s market at Paleo Psychiko (Arsakeiou Square), an Athens suburb, I came across unbelievably witty and eye-catching Oyster mushrooms, which looked delicious and tasted even better!
Oyster mushrooms sold fresh at farmers markets or stores are cultivated and are in season all year round! They are truly healthy and contain protein, carbohydrates, fiber, B vitamins, minerals and an antioxidant and are, of course, a great addition to any meal. Their mild flavor works well in pretty much any dish calling for mushrooms but personally I like them best broiled or roasted with olive oil and herbs and added to a colorful spring/ summer salad like this week's suggestion . . . . . served on its own, as a topping for toast or as a side dish!
